Recipe: Baked Pineapple

This tasty six-ingredient six-step recipe was passed down to Carolyn from her mother, who would make it in a larger batch and sell it at church bazaars. Those who had the pleasure of tasting it have long sung its praises, and it has since become a beloved family recipe among the Rutherfords.

Serves: 8

INGREDIENTS:

  • 3 eggs
  • 2 tablespoons flour
  • 4 slices of white bread
  • 1/4 pound of melted butter
  • 1/2 cup sugar
  • One 20-ounce can of crushed pineapple

INSTRUCTIONS:

  1. Preheat the oven to 350˚F.
  2. Beat eggs in a mixing bowl.
  3. Add flour and sugar and mix well. Then, add pineapple and stir
    until combined.
  4. Pour the mixture into a 1-quart buttered casserole dish.
  5. Cube bread slices and melt butter in a separate, small dish. Then, top the mixture
    in the casserole dish with the cubed bread and pour the melted butter over top.
  6. Bake at 350˚F for one hour
